Good-quality Jalapeno peppers should be firm, smooth-skinned and have solid green coloring. Dry lines are not a blemish. They are signs of a mature pepper and indicate hotness.

Note: Hot peppers contain capsaicin so take extra care to insure displays are not within reach of children. This capsaicin offers antioxidant properties. Antioxidants have been thought to thin blood preventing strokes which lands hot peppers on the Super Foods list.
